As you might already know we go to great lengths to make sure we’re serving the freshest produce and ingredients we possibly can. We source from local farms such as our grass-fed beef from Machado Brothers Ranch in San Luis Obispo, our raw, organic Honey from Golden Harvest Beekeeping in Redwood City and our organic, free-range chicken from Petaluma Poultry in Petaluma. Since we hold such a great importance on serving local, organic produce and proteins, we also wanted to make sure we're doing the same with our fish.
We’ll be sourcing all of our trout from the sustainable fish purveyor, TwoXSea in Sausalito. The founder of TwoXSea, Kenny Belov, has partnered with American Trout to sell sustainably farmed trout from McFarland Springs, which is about five hours NE of San Francisco. Kenny makes it a point to be completely sustainable and is committed to a long term view of renewable resources. He believes in saving the oceans for future generations and providing fair wages and respect for the men and women who work hard to fish responsibly.
Our Seared McFarland Springs Trout with roasted parsnip, celery root, baby potatoes and arugula is now available on our dinner menu.
